School Lunch
Diego’s class hours are from 11:30 am to 2:30 pm. That means he eats his lunch in school, which also means we have to prepare his lunch kit everyday.
The first week of school was pretty easy because he only went to school twice, they being on adjustment schedule. I had a lot of fun planning and preparing his baon for school.

This was his lunch on the first day: half a cup of brown rice, creamed chicken with grated cheese and 7 pieces of green beans. I consult my son about what baon he wants to bring, that way I know he’ll finish his food without worries.

I put his food in an air-tight reusable plastic container and place it in the bottom insulated portion of his backpack, with his spoon and fork, a brick of juice and some cookies.
For his second day in school, he asked me to make him a vegetable sandwich. So, I made one with whole wheat bread, lettuce, tomatoes, cucumbers and cheese paired with home-made french fries and 2 slices of orange.
I’m a bit worried when regular classes begin though. Preparing a lunch kit everyday is a bit daunting. I fear that with work+chores+baby getting in the way, I’d run out of ideas and resort to serving hotdogs and chicken nuggets most of the time.
Fortunately, I came across two websites that can help me with my lunch kit dilemma. Annabel Karmel and Wendy Copley provide wonderful ideas on what to pack for your little school soldier that are easy to make, not to mention pleasing to look at.
I believe that presentation is as important as taste, so I make it a point that my kid’s lunch is presentable. Nothing fancy though. I just play with colors as of the moment. But, one of these days, I do want to make something as nice as these.

Now, who wouldn’t want to eat lunch if it’s this cute? For starters, maybe I could come up with something like this once a week. Some kind of a “special of the week”. In the meantime, I need to sit with my pen and paper and make this week’s baon planner.
I hope I survive the whole school year. Wish me luck.
